I'm off to eat the traditional new years day dinner- roast pork, sauerkraut and dumplings in order to bring good luck in the new year! I think I've only missed it once or twice in my life.

Yeah its a family tradition that everyone claims is German, but all the Germans I've asked about it seemed confused about it. My suspicions are that it's a New World tradition that changed when it came over.

made a risotto with no onions, garlic, or dairy for a friend on an allergy restricted diet. It wasn't really risotto but it was pretty good. used dom's directions on how to make stock (used potato skins, celery, carrot, tomato). served over spinach with roasted olives, walnuts, and tomatoes.
dessert was a creme of apricots, hazelnuts, and cocoa rolled in freeze dried raspberries that we powdered. good food and a cool challenge for my friend who can eat very few foods that aren't meat. after six more months and a followup with the allergist his food list should increase slowly.

Huh, never roasted olives before, I've dehydrated them though, could be interesting. It's always good to cook outside your comfort zone every once in a while.

Got some deer chili in the crockpot slowly turning into a magic concoction and let some bread ferment overnight that I'll be putting in the oven later, so today is going to rule.

Been using my leftover sourdough starter to make pancakes lately. They're alright, mainly just don't want to throw it out. Had some actual sourdough after that. Carb loading.

I've been meaning to get some starter going again,I'm so bad at maintaining it, though.
I made some indian curry with deer again yesterday, and it is fucking delicious.

It's hard sometimes, especially in summer because you have to feed it twice a day if your room is too hot. Sometimes I still feed mine twice a day. Now that it's at full strength I can get away with just one. As long as I keep baking I shouldn't have to throw much away, problem is the whole process takes like 6 hours. Lots of downtime, but still can't do it on a work day.

I've just been preparing a poolish in the morning of the day I want any bread. I don't keep my house warm enough in the winter to keep a very active starter, anyways. I should have put the one I was using when it was warmer in the fridge.

If it's a real bright day outside, I'll leave it on my kitchen window sill in direct sunlight. If it's not bright, I'll turn the oven on for a couple of minutes to warm it up and leave it sealed in there. Either way takes anywhere from 4 - 8 hours, I just have to keep an eye on it to make sure it doesn't collapse.
