I love this.I just kinda wing it when i make it.so i dont know portions or technical stuff... its super easy though.. For the "noodles" you just use zuchini..(this is easier with a noodle maker..but i just use a knife.)and make pesto...and bam..delicious delight of raw veggie goodness.
Noodles: a few Zuchini's.-cut them into little spaghetti/linguini style strips of your desired size.set aside...dont cook.
Vegan pesto: -a bunch of fresh basil leaves -some cloves of garlic(chop em some) -pine nuts (kinda pricey item here...you could use sunflower seeds i guess) -Extra virgin olive oil. -sea salt -(sometimes i throw fresh spinach,red pepper flakes...whatever in it.do what ya like..its for your health.)
to make the pesto just put it in a food processor,mix it up...then when it tastes to your liking and the consistency you want..(which is like pasty but saucy pesto)...mix it in with your "noodles" and there ya go!.........(dont put zuchini in food processor dur!)
its also good with fresh chopped tomatoes...and sometimes i roast some red peppers to throw in.but thats not really raw yknow.
so mess with it and make it how ya like.

Awesome first post! I love pesto and I hate that they put parm in it! Don't have a food processor so I can't make it unfortunately.

Being Italian I of course love that they put parm in. Haha, sorry Will, I could never be vegan because of that. Though I do avoid parm that includes rennet, unless it's vegetable of course.
