2 cups vital wheat gluten flour 1/4 C nutritional yeast 2 tbsp all purpose flour 1 C cold water or vegetable broth 1/2 C soy sauce 1 tbsp olive oil 1 tbsp tomato paste 2 cloves garlic, grated 1 tsp lemon zest (i use lemon juice)
optional shit: crushed red pepper hot sauce balsamic vinegar ginger anything else delicious
broth: 12 C water or vegetable broth( i recommend the broth) 1/2 C soy sauce
in a large bowl, mix dry ingredients, and in another bowl, mix wet ingredients. get the broth + soy sauce ready in a big ass pot, cuz that shit needs to be cold when you add the dough. combine the wet and dry ingredients (the broth is separate you dummy) knead your dough for about 5 minutes until it's elastic-y. let it sit for about 5 minutes. then roll it into a log about 10" long, and cut it into 6 equal pieces. put them into the broth but make sure that shit is COLD when you put em in. turn on the heat and let it come to a strong boil. put a lid on it but vent the lid, and let it boil for at least an hour, stirring it and checking it occasionally to make sure your seitan pieces don't stick to the bottom of the pot or you'll be pissed. after an hour or hour and a half, turn the heat off and let that shit cool down. then you can eat it or put it in containers for the fridge/freezer. enjoy! it might take a bit to get the consistency right, it did for me. but once you have it figured out, it's awesome. oh and i save the extra broth for next time!

Heil seitan! Really easy to make and really good. I made seitan sausage a couple of time (mix all that stuff, roll it into a folio and put into oven for about 45 minutes), but now i usually just boil it, cut into small pieces/thin slices and fry them well on a pan. I used to have problems with how it feels like (a bit soft and meatish) but frying fixes that.

Cool, I'll try this next week maybe when I have time. Iono though, I just got my French Laundry cook book, so I might try some of the recipes in there.
